The Position

Basic Function

Meat Scientist

The R&D team is responsible for developing products from concept to commercialization.  The Meat Scientist position plays a key role in delivering excellence in product design to ensure flavor, functionality and innovation. 

Responsibilities/Job Description

  • Develop food products that deliver on quality, cost, and commercialization expectations
  • Agility in delivering exceptional product quality on aggressive timelines.  A sense of urgency with high quality output is essential to the success of this position
  • Advanced understanding of ingredient functionality in proteins and processing for optimal product development
  • Inspire the organization with strategic vision and innovative product concepts

  • Work closely with Regulatory and Labeling & Specifications teams to ensure all regulatory, nutritional, labeling goals are achieved through development

  • Collaborate with Commercialization, Operation, and Supplier teams to ensure an efficient translation of product formulas to Bellisio Foods production facilities

  • Acquire and apply new industry ingredient and equipment technologies

  • Educate internal and external partners on food trend, technologies, and processes

  • Act as a leader and ambassador for Product Development, R&D, and Bellisio Foods

  • 20-40% travel required to production facilities and customer presentations
  • Other job responsibilities as assigned

The Candidate

Education / Certifications

  • 5 - 8 years of protein product development and commercialization

  • Strong sense of curiosity and desire to learn and grow personally and professionally within the department, company, and industry

  • Degree in Meat Science or related field

  • Passion for food and the food industry

  • Culinary experience or education is a plus

  • Comprehension of USDA regulations.  Familiarity with Gluten Free, non-GMO, low fat, low carb, sodium reduction, and religious dietary guidelines is a beneficial

  • Excellent verbal and written communication skills

  • Champions a “What If” attitude, searches and provides new ideas and solutions

  • Strong presentation skills to internal and external customers

  • Adaptability and flexibility to focus quickly on changing situations and objectives

  • Attention to detail, organization, and solutions oriented are all keys to success

  • Proficiency with Microsoft Office.  Comfortable learning new data management systems.  SAP experience is a plus

  • Be an engaged and eager participant in the growth of the Bellisio Foods business
